3.饮茶礼仪的不同

首先是总说茶文化:
1. 茶的起源:中国在历史上有很长的饮茶纪录,已经无法确切地查明到底是什么年代了,但是大致的时代是有说法的,并且也可以找到证据显示,确实在世界的很多地方饮茶的习惯是从中国传过去的。
所以,绝大多数人认为饮茶就是中国人首创的,世界上其它地方的饮茶习惯、种植茶叶的习惯都是直接或间接地从中国传过去的。但也有人认为,世界其它地方也是茶的发明地。因为我和这个观点不同,所以我在这里不会介绍太多。如果你感兴趣,可以登陆查看。
同时,也有关于中国茶最早起源的争论。 有几种意见,其中大多数在云南。
2。茶文化的定义:茶是劳动的产物,是饮料。茶文化是以茶为载体,并通过这个载体来传播各种文化,是茶与文化的有机融合,这包含和体现一定时期的物质文明和精神文明。
3. 茶文化的内涵:茶文化的内容十分丰富,涉及科教、文艺、医保、历史、经贸、餐旅和新闻出版等学科与行业,包括茶叶专著、茶叶期刊、茶与诗词、茶与歌舞、茶与**、茶与美术、茶与婚礼、茶与祭祀、茶与禅教、茶与楹联、茶与谚语、茶事掌故、茶与故事、茶与习俗、茶艺表演、陶瓷茶具、茶馆茶楼、冲泡技艺、茶食茶疗、茶事博览和茶事旅游等二十一个方面。
四。茶文化体系:包括茶史、茶文化社会学、茶民俗、茶美学、茶文化交流五个方面。
5. 茶文化特征:
① 历史:茶文化的形成和发展有着悠久的历史。武王伐纣,茶叶已作为贡品;原始公社后期,茶叶成为货物交换的物品;战国时,茶叶已有一定规模;先秦《诗经》有茶的记载;汉朝,茶叶成为佛教“坐禅”专用补品;魏晋南北朝,已有饮茶之风;到了隋朝,以发展到全民皆“茶”;唐代,茶业昌盛,出现茶馆、茶宴、茶会提倡客来敬茶;宋朝流行斗茶;发展到清朝,曲艺进入茶馆,茶叶对外**发展。
在历史上,茶文化注重文化意识形态,注重高雅,注重诗歌、书法、茶歌舞;
② 时代:物质文明和精神文明的发展,为茶文化注入了自然的内涵和活力。新时期茶文化溶进现代科学技术、现代新闻**和市场经济精髓,使茶文化价值功能更加显著、对现代社会的作用进一步增强。
茶叶的价值在于进一步树立以茶文化为核心的意识,国际交流日益频繁。新时期,茶文化传播呈现出规模化、现代化、社会化、国际化的趋势。其内涵迅速膨胀,影响扩大,为世人瞩目。
③民族性:各民族酷爱饮茶,茶与各自民族文化生活相结合,形成各自民族特色的茶礼、茶艺、饮茶习俗及喜庆婚礼,以民族茶饮方式为基础,经艺术加工和锤炼而形成的各民族茶艺,更富有生活性和文化性,表现出饮茶的多样性和丰富多彩的生活情趣。
④地区性:我国地区广阔,茶类花色繁多,饮茶习俗各异,加之各地历史、文化、生活及经济差异,形成了各具地方特色的茶文化。
⑤国际性:中国茶文化是世界各国茶文化的摇篮,差人不分国界、种族和信仰,茶文化可以把全世界茶人联合起来,切磋茶艺,学术交流和经贸洽谈。
在介绍了第一个方面之后,我们来谈谈第二个方面:中国茶文化。
一。中国茶文化的形成与发展:中国是茶的故乡,也是世界上第一个发现、利用和培育茶树的国家。
茶至少有七万年的历史。茶叶的利用最初是在野外采集活动中构思出来的。依照《诗经》等有关文献记录,“茶”是泛指诸类苦味野生植物性食物原料的。
在食药结合的历史时代,茶树油的解渴、清神、除食、除疟、通便等功能不难发现。然而,有一般性的药用发展为习常的专用饮料,还必须有某种特别的因素,即人们实际生活中的某种特定需要。巴蜀地区,向为疾病多发的“烟瘴”之地,故巴蜀人俗常饮食偏辛辣,至今依然。
正是这种地域和由此决定的人们的饮食习俗,使得巴蜀人首先“煎药”服用解热毒。久服成习,茶于是就成了一种日常饮料。秦人入巴蜀时,见到的可能就是这种作为日常饮料的饮茶习惯。
茶由药改为常饮,产生了意义严格的茶。我大致把茶文化的发展分为六个阶段:
① 三国以前茶文化的启示:许多书将茶的发现时间定为公元前2737-2697年,茶的历史可以延伸到三帝和五帝。东汉华佗《食经》中:
“苦茶久食,益意思”记录了茶的医学价值。到三国魏代《广雅》中已最早记载了饼茶的制法和饮法:茶以物质形式出现而渗透至其他人文科学而形成茶文化;
②晋代、南北朝茶文化的萌芽:随着文人饮茶之兴起,有关茶的诗词歌赋日渐问世,茶已经脱离作为一般形态的饮食走入文化圈。两晋南北朝时期,帝王、贵族聚敛成风,一般官吏乃至世人皆以夸豪斗富为荣,在此情况下,一些有识之士提出“养廉”的问题。
于是就有了陆纳、桓温以茶代酒之举。在陆娜和桓温那里,喝茶不仅是为了提神解渴,更是为了用茶招待客人,祭祀,表达一种精神和情操。饮茶进入了精神领域。
随着佛教的传入和道教的兴起,饮茶与佛教、道教有着千丝万缕的联系。在道家看来,茶是帮助炼“内丹”,修成长生不老之体的好方法;在佛家看来,茶又是禅定入静的必备之秀之物。此时,茶已从饮食的物质形态中分离出来,具有显著的社会文化功能,中国茶文化开始形成。
③唐代茶文化的形成:780年陆羽著《茶经》,是唐代茶文化形成的标志。在周杰伦演唱的《爷爷泡的茶》中也有提到“陆羽写《茶经》三卷,已流传了千年”,可见《茶经》的影响力已渗透到现代流行**领域,实属不易!
《茶经》概括了茶的自然和人文科学双重内容,**了饮茶艺术,把儒、道、佛三教融入饮茶中,首创中国茶道精神。唐代形成的中国茶道包括宫廷茶道、寺庙茶道和文人茶道。
④宋代茶文化的兴盛:宋代茶业已有很大发展,再问人中出现了专业的品茶社团,有**组成的“汤社”、佛教徒的“千人社”等。宋太祖赵匡胤在朝廷设立茶事机构,朝廷用茶也分为不同层次。
至于下层社会,茶文化更是生机活泼:有人迁徙,邻里要“献茶”;有客来,要敬“元宝茶”;订婚时要“下茶”;结婚时要“定茶”;**时要“合茶”。民间茶斗带来了一系列收藏和烹调点的变化。
⑤明、清茶文化的普及:明代不少文人雅士留有传世之作,如唐伯虎的《烹茶画卷》、《品茶图》,文徵明《惠山茶会记》、《陆羽烹茶图》等。到了清朝,茶叶出口已经成为一个正式的产业,有无数的书籍、事件和诗歌。
⑥现代茶文化的发展:咱们新中国成立后,我国茶叶从1949的年产量7500吨发展到1998年的60余万吨。茶物质财富的大量增加为我国茶文化的发展提供了坚实的基矗随着茶文化的兴起,各地茶艺馆越办越多。
第五届国际茶文化研讨会吸引了日本、韩国、美国、香港和台湾的参与。
总而言之,言而总之,中国茶的历史及其发展,不仅仅是形成简单的一种饮食文化过程,而同样映射出一个具有上下五千年历史的民族的精神特质。
2.世界茶文化趣谈:听我站在台上唠叨了这么久,大家也有的“听力疲劳”
了,可我不累,站着说话不腰疼嘛,所以我还要接着讲。我就讲讲世界茶文化趣谈,就当二十三杯茶给诸君提提神:英国人早上起床,往往爱空着肚子喝茶,并命名为“床茶”,上午八点还要喝“晨茶”,午饭后,还有一次“午后茶”,而到了下午四点半左右,就是饮“下午茶”的时间,到了晚饭后他们居然还要喝“晚饭茶”;泰国人喜欢饮冰茶,方法很简单,就是在热气腾腾的一杯热茶中放入一些冰块;埃及人喜欢饮甜茶,茶中放入许多白糖,同时送来一杯供稀释茶水用的生冷水,表示对客人的尊敬。
三。中国茶文化与日本茶文化:当我们谈论中国茶文化对世界的影响时,我们不得不谈论日本茶文化。首先,请看一部短片。
日本茶道是唐文化的翻版。其主要目的是接待客人,联系感情,培养气质的特殊礼仪活动。日本茶族应该体现,并且,尊敬,清静,我们一起喝茶。
如今,在中国福建省举行的茶话会与日本的茶道大体相似。但除了中日茶文化的比较之外,还有值得我们思考的地方。茶出于中国,兴于中国,为什么这灿烂的文化瑰宝,在这近一百年中,却改变了它千年的内涵底蕴。
我们应该重视传统文化,在这个竞争激烈的时代,这一点更为迫切。我们应该向日本学习他们对茶文化的追求,大不必用泱泱大国的心态自居,日本今天保留了一套完整的饮茶习惯,并将它们作为教程编入大、中、小学教材中,可见其普遍性,更可见我这次讲座的重要性!下面我来简要说说最后一大方面:

茶,山茶科山茶属小乔木或灌木状。深秋时节开白花,翌年秋天结实。原产中国,广泛栽培,形态多变异。唐代陆羽著《茶经》:“茶者,南方之嘉木也。”谓其形态“树如瓜芦,叶如栀子,花如白蔷薇,实如栟榈,茎如丁香,根如胡桃。”又将其生地分为三等:“上者生烂石,中者生栎壤,下者生黄土”。原是一棵山野间的无名树,千万年来在自然生境里与其它树木苦苦拼争,有一天为人所发现,从此与人类共生共荣,一起征服这个世界。人将茶制成饮品,并在其上演释出文化以承载精神寄托;而茶利用人的需求,借其力从险象环生的自然竞择中脱颖而出,养尊处优地繁衍自己的种群。茶给人提供一口苦涩而妙曼的汤水,人便心甘情愿为其播种、耕作,挥汗如雨帮它发展壮大DNA。从这个意义上来说,或许茶比人的生存智慧更高。
话题扯远了,还是言归正传。国人制茶,以工艺不同分红、绿、青、黄、黑、白六类。有名的品种:红茶如祁红、正山小种,绿茶如西湖龙井、碧螺春,青茶如武夷岩茶和铁观音,黄茶如君山银针,黑茶如普洱,白茶如白毫银针、白牡丹。而这白毫银针和白牡丹,便是政和白茶中的极品。
政和,闽北一山城,古县名关隶,多出产贡茶——芽茶。芽茶即银针。宋政和年间,徽宗帝喝了关隶县选送的银针,龙颜喜动,将年号“政和”赐予关隶作了县名。政和白茶原以菜茶品种的小芽为原料,清朝初年,政和铁山发现大白茶树种(国家级优良茶树品种),逐广为栽培,并以此为原料制出白牡丹、白毫银针、寿眉、白毛猴、莲心等多个优质白茶品种。
政和白茶以大白茶树春季新梢加工而成。每年清明前后,春茶新梢萌发,毫心肥壮,茸毛洁白,茶农将其摘下(一芽一叶或一芽二叶),置于室内通风干燥处,用人工“抽针”(摘取芽头),以制白毫银针,而制白牡丹是不用“抽针”的。政和白茶属全萎凋微发酵茶。在晴好的日子里,茶农将新摘的茶叶匀摊于水筛之上,置于通风专用茶楼里自然凉青(萎凋),待八、九成干后,再行烘干,形成毛茶。毛茶经精心拣剔、拼配、匀堆和复烘,制成最终的成品茶。
当年徽宗皇帝品芽茶而论道,称“白茶自为一种,与常茶不同。”政和白茶清鲜、纯爽、毫香,其独特的品质得自天成及精堪的加工技艺。春末正值新茶上市,政和举办“白茶节”,我接邀而至,逛茶园,看茶戏,会茶友,品银针。茗香茑茑处,尽是慕茶人。
